The Amino Acid Issue
Our son got married last week (hooray!) and we were up in the Seattle area. I was having a lovely lunch on the shores of Lake Washington when a friend mentioned her son had just graduated with an agriculture degree. We got talking about the importance of soil, and she told me she's definitely a meat eater. She was all in on the sustainability case for eating more plants, but she had one real hesitation: was she getting the right amino acids? Well, let's dig in.
First, what are amino acids? They're the building blocks of protein. Think of protein as a word and amino acids as the letters. There are twenty of them, and your body makes most on its own. Nine it can't, so those nine are "essential," meaning food has to provide them, because we can't store them up.
Why protein gets the muscle credit. Muscle is built out of protein, so your body stacks those amino acids into muscle whenever it repairs or grows. But it uses the very same building blocks for your skin, your hormones, and your immune system too. Protein doesn't just build muscle. It builds you.
Animal protein is just plant protein, secondhand. No animal makes its own essential amino acids. Not cattle, not chickens, not salmon. They build their muscle from the plants and microbes they eat, then we eat the muscle. The amino acids started in the soil either way.
Meat is a package your body has to unpack anyway. Here's the part that reframes everything: your body still has to break meat back down into those same nine amino acids before it can use them, then restack them into you. Meat was never a better form of protein. It's just a package. Convenient, sure. Familiar, yes. But the "superior protein" story was written by culture and marketing, not by your body. Your body only ever wanted the amino acids, and plants hand them over directly.
Go straight to the source. Every whole plant food already carries all nine essential amino acids. Some plants are richer in certain ones than others, and your body sorts that out for you across the day. You were never missing a thing.
What "complete protein" even means. You've probably heard some foods called "complete" and others "incomplete." All it means is proportion. A complete protein has all nine essential amino acids in the amounts your body wants. A few plants clear that bar solo, like soy, quinoa, and hemp. The rest carry all nine too, just lighter in one, so they lean on the other foods you eat that day to even out. "Incomplete" never meant missing. It only ever meant a little less of one.
The combining myth. You don't need to pair rice and beans at the same meal. Your body stores amino acids and pulls from that supply throughout the day, so lentils at lunch and rice at dinner still add up. The old "combine your proteins" rule was retired by nutrition science decades ago.
Building muscle as you age. Yes, we lose muscle as we get older, and muscle gets a little less responsive to protein over time. But the answer was never a special amino acid or a powder. It's two plain things: eat enough protein across the day, and move your muscles against some resistance, even bodyweight or bands. Plants handle the protein easily. Most plant-based eaters get about twice what they need without trying. You just keep showing up on the movement side, and your body holds its strength for decades.
